Soft Tofu Stew (순두부 찌개, Soon-dubu Jjigae)


Who doesn’t love Soft Tofu Stew? This bubbly stew is delicious, versatile, and can take you only 10 minutes!! You can add almost anything you want: dumplings, kimchi, seafood, beef, or pork! At a Korean restaurant it is served in a ceramic pot (called a 뚝배기, ttukbaegi) bubbling hot, with a raw egg that you drop in yourself. I have always loved soondubu jjigae, and if you try my recipe you will understand why! In this recipe, I use a pre-made soup base (Tofu Soup Base), so that if you happen to decide that you want soft tofu stew for dinner, you can have it done in 10 minutes!

🇰🇷 Some ingredients may need to be bought at a Korean grocery or online.

🍆 Vegetarian friendly (use the vegetarian version of the soup base sauce)

🙋🏻 Serves 1 person. Double portion if making for 2!

👍🏻 Very easy and great for beginners!

What You'll Need:

1 tube of extra soft tofu (11 ounce tube)

2/3 cup water

2 tablespoons tofu soup base

¼ cup of optional miscellaneous ingredient (beef, pork, dumplings, kimchi, zucchini, mixed seafood are examples)

1-2 teaspoon of red pepper powder (optional, to adjust for spice preference)

1 raw egg

1 chopped green onion for garnish

Instructions:

Add water, and the special tofu soup base to a small pot. Add any additions (beef, seafood, kimchi, zucchini, dumplings), and the red pepper powder if you prefer spicy. Bring to a boil.

Gently add the tofu and break apart with a spoon. When the stew is boiling, add your raw egg. This will cook in your bubbling stew (don’t forget to break the yolk!). Add chopped green onion to garnish. When the egg is done, you are ready to eat!
