Instant Pot Short Rib Soup (갈비 탕, Kalbi- Tang)

One of my favorite meals to order at a Korean restaurant is Kalbi Tang. The key to a good Kalbi Tang is a wonderfully smooth clean tasting beef broth. The short ribs should be fall off the bone, and you will love the taste of this hearty soup!

This recipe normally takes about 2 hours over the stove to to make, but the Instant Pot cuts that time in half! Plus I don't have to babysit the stove which incredibly valuable time I can spend watching my kids instead!

What you will need

3-4 lbs of bone-in short rib

1 large chunk of Korean Radish

4 green onions cut in half

1 onion cut in half

4 slices of ginger

10 whole cloves of garlic

10 cups of water

1 tbsp of soup soy sauce

Chopped green onions for garnish

Salt and Pepper to taste

Prepare the short ribs:

You want to achieve a clear broth, clean of beef's blood and excess fat. Optional Step: Soak the short ribs in cold water for 2-3 hrs. You will notice blood will seep out of the short ribs and into the water. Discard the water. Paraboil the short ribs in boiling water for about 5-7 minutes. You will see excess blood and fat boil out. Discard the excess hot water. Rinse the short ribs under running water.

Instant Pot Time!

Add your cleaned short ribs, Korean radish, green onions, onion, ginger, garlic, and 10 cups of water. Ahjumma tip: use hot water to decrease time for the Instant Pot to reach pressure! Close the Instant Pot. Press MEAT/STEW and set for 50 minutes. When the timer is finished, quick release pressure, and open your Instant Pot. Remove the contents of the broth. Set the radish and short ribs aside and discard the rest of the vegetables. Run the broth through a mesh strainer. Add soup soy sauce to the broth.

And now the rest:

Add several pieces of short rib, radish, broth, and chopped green onions in a bowl. Finish off with black pepper and salt to taste. Not pictured: some people like to add dangmyeon (sweet potato noodles) to their soup. To do this, add cooked noodles (as described on the package) to your finished dish. Enjoy with rice and kimchi!
